Coconut Sap Sugar (also known as coco sugar, coconut palm sugar, or coco sap sugar) is a sugar produced from coconut nectar, which flows from coconut flowers. It has been used as a traditional sweetener for thousands of years in the South and Southeast Asian regions where the coconut palm is in abundant supply.
Coconut sugar offers more vitamins and minerals than white table sugar, containing trace amounts of Vitamin C, potassium, phosphorus, magnesium, calcium, zinc, iron, and copper. It has a low glycemic index of 35, as compared to white sugar that ranks between 60 and 75. Coconut sugar also has less fructose at 45%, making it a better option that other sweeteners such as agave nectar (90%) and high fructose corn syrup (55%).
Coconut sugar is a more earth-friendly alternative, using less water and fuel, compared to can sugar production. The United Nations' Food and Agriculture Organization named coconut palm sugar the most sustainable sweetener in the world in 2014. It has no artificial ingredients and is not chemically altered in any way.
